How to serve by age

6-9 months

Prep:

Halve the delicata squash, scoop out the seeds, and roast or steam it until very soft. The skin is thin and softens with cooking, but for the first tastes it is easiest to scoop the soft flesh away from the skin and serve it warm as a mash or as a soft strip to hold.

Cut:

Smooth mash, or soft finger-length spears about the width of a thumb to self-feed.

9-12 months

Prep:

Soft-cooked delicata squash in small pieces the baby can pick up. The cooked skin is soft enough to leave on now if you like, cut into small pieces. Keep everything fork-soft and warm.

Cut:

Bite-size soft pieces or soft cubes (about Β½ inch / 1.25 cm).

12-18 months

Prep:

Soft-cooked delicata squash close to family texture, in bite-size pieces, skin on or off. It mashes easily and mixes well into grains, pasta, or other vegetables.

Cut:

Bite-size soft pieces; mash or cube.
